Que Chula es Puebla Celebrates Sixth Anniversary This Weekend

Pollo con Huitlacoche has become one of Que Chula es Puebla's most popular dishes. A great choice for a summertime dinner, it is prepared by stuffing chicken breast with cheese, corn, poblano pepper and huitlacoche. The chicken is topped with sauce and served with spinach and Mexican rice. This dish has an interesting history.

When Pablo Ilagorre, the owner of the Sleepy Hollow restaurant, was growing up on his father's farm in Mexico, huitlacoche was thought to be an undesirable corn fungus so it was cut away and discarded. It was not until much later that he learned from his wife Sonia that huitlacoche was considered by chefs as a delicacy, even referred to as Mexican cavier, and was much more expensive than corn.

By luck, Sonia had retained some family recipes that used huitlacoche as an ingredient and she gave them to Pablo.

Patrons who celebrate Que Chula es Puebla's sixth anniversary by ordering Pollo con Huitlacoche ($18) or any other entree on the menu will receive a special offer for margarita or sangria by the pitcher. The beverage offers apply for Friday through Sunday, August 2-4, 2013. There is also a dessert offer for kids on Sunday only. The offers are:

  • A  margaritas pitcher ($35). An additional half-pitcher is provided free
  • A Mexican sangria pitcher ($25). Made with tequila, peach schnapps and lime juice. An additional half-pitcher is provided free
  • A regular sangria pitcher ($22). Made with brandy. An additional half-pitcher is provided free
  • A free dessert called Churro is given to children on Sunday only.
