Three Square Meals, Farmers Market Style

Some ideas for how to prepare fresh, local foods from the farmers market in Purchase with just a bit of help from some items in your pantry.

Vendors at the Pepsico farmers market are entering harvest season now, so here are some simple and inexpensive recipe ideas for how to use fresh, local food in all three meals one day this fall.

Each of the meal ideas below includes foods you can find at the farmers market in Purchase, as well as add-in ingredients you're likely to already have in your pantry. Enjoy!

Breakfast - Eggs with Toast and Jam
  • Cage-free eggs, however you like them, from Ronnybrook Farms (Ancramdale, NY)
  • Raisin, cranberry and walnut toast from All You Knead Bread (Beacon, NY)
  • Jam from Renee's Jams and Jellies (Westchester, NY)
  • Add-ins: Juice of your choice and coffee or tea
Lunch - Arugula Salad with Grilled Chicken, Pears and Almonds
  • Arugula, carrots, onion, pears, all from Migliorelli Farms (Tivoli, NY)
  • Organic heirloom tomatoes from Late Bloomer Farm (Montgomery, NY)
  • Ginger Salad Dressing from Krazy for Kazus (Falls River, CT)
  • Add-ins: Chicken and almonds
Dinner - BBQ Black Bean Cheddar Burgers with Local Sour Cream and Fresh Corn
  • 2 cage-free eggs, whisked, from Ronnybrook Farms
  • 3 cloves garlic and 1/2 onion minced, lettuce for topping from Migliorelli Farms
  • 1/4 cup BBQ Sauce from Krazy for Kazus, extra for topping
  • Tomato for topping from Late Bloomer Farm
  • Extra Virgin Olive Oil for the pan from Olive Oil of the World (imported to Pawling, NY)
  • 6 ears of corn from Migliorelli Farms
  • House bread from All You Knead Bread
  • Sour Cream for topping from the Hudson Valley Fresh Dairy Cooperative
  • White or Red Wine from Harvest Spirits (Valatie, NY)
  • Add-ins: 15 oz. black beans (soaked or canned), 1/2 cup breadcrumbs, salt, pepper, cumin, oregano and cheddar cheese to top burgers

How to make the burgers:

  1. In a large bowl, combine beans, BBQ sauce, breadcrumbs, eggs, garlic, and onion with your hands. Shape the concoction into burgers and place in an oiled frying pan.
  2. Cook on low heat for eight minutes, then flip carefully so they don't break! When the second side is almost done, place sliced cheese on top and wait to melt.
  3. Serve with sliced bread, lettuce, tomatoes, a dallop of sour cream and/or BBQ sauce, steamed corn, and a glass of wine.
Dessert - Warm Raspberry Streusel
